One LARGE packet of dried flakes of my sourdough starter, so you don't need to create your own from scratch. This is a rye-based starter, but VERY robust, and can be used to start a rye OR wheat starter (or both), depending upon which flour you want to use. (I maintain my starter on white flour, but use it to bake both wheat- and rye-based breads, and it works wonderfully.)
